Marinated Spices Fried Chicken

This aromatic fried chicken style is popular in south of Thailand


for 900 grams of chicken thigh or chicken wing

* 15 cloves of garlic
* 2 coriander roots (optional)
* 2 teaspoons peppercorns
* 1 teaspoon roasted coriander seeds
* 1 teaspoon roasted cumin seeds
….Grinding whole over spices
* 2 table spoon seasoning sauce
* 1/2 tea spoon salt
* 1 table spoon cooking oil

Use fork poking throughout the chicken on both sides
Marinated and mix all ingredients well before keep in refrigerator at least 4 hours or overnight

Place chicken by tong in hot oil, skin side down then reduce heat to medium
Fry and turning occasionally until golden brown and cooked through
Turn heat to high and turning once before transfer to drain on wire rack

Place the cooked chicken in a plate and sprinkle with deep fried shallot


Sweet and Sour Dipping Sauce

* 4 table spoon tamarind paste
* 2 table spoon white vinegar
* 3-4 table spoon sugar
* 1/4 table spoon salt
* 1 table spoon (or more) chopped 4-5 Thai bird’s eye chilies and 2 small garlic cloves
* 1/2 teaspoon cornstarch mixed with 2 teaspoon water
Mix tamarind paste and white vinegar to boil in a small pot.
Add sugar, salt and taste
Mix cornstarch and water add to the other ingredients and stir to thicken
Add chopped chlies and garlic, stir well
